The Perfect Autumn Cookie: Ginger Cookies

These cookies are spicy, chewy, and rolled in demerara sugar: in other words, the perfect autumn cookie.










These cookies have 3 kinds of ginger in them: powdered, fresh, and candied. The candied ginger is totally optional, but I like how it gives such wonderful flavor and chew.

Chewy Ginger Cookies Recipe:

-makes 12 cookies-

Cookie dough

  • 57g butter

  • 50g sugar

  • 50 dark brown sugar

  • half an egg

  • 43g molasses

  • 1 and 1/4 tspn grated ginger

  • 1/2 tspn plus 1/4 tspn cinnamon

  • 1/8 tspn cloves

  • 1/2 and 1/4 tspn baking soda

  • 1/4 tspn salt

  • 120g flour(all-purpose)

  • 1/4 cup candied ginger

  • Demerara sugar, for rolling

  1. Combine softened butter, both sugars and cream until light and fluffy, 2-3 min.

  2. Add egg. Mix util emuslified. Add molasses. Mix

  3. Mix in spices, ginger, and baking soda.

  4. Add flour and candied ginger

  5. Chill for at least 30 min.

  6. Portion out 1 1/2 tbsp sized balls and roll in sugar. Chill for 5 min. Bake at 350 for 13 min.

  7. Let cool on the wrack.

  8. Enjoy!
