These cookies are spicy, chewy, and rolled in demerara sugar: in other words, the perfect autumn cookie.
These cookies have 3 kinds of ginger in them: powdered, fresh, and candied. The candied ginger is totally optional, but I like how it gives such wonderful flavor and chew.

Chewy Ginger Cookies Recipe:

Cookie dough
57g butter
50g sugar
50 dark brown sugar
half an egg
43g molasses
1 and 1/4 tspn grated ginger
1/2 tspn plus 1/4 tspn cinnamon
1/8 tspn cloves
1/2 and 1/4 tspn baking soda
1/4 tspn salt
120g flour(all-purpose)
1/4 cup candied ginger
Demerara sugar, for rolling
Combine softened butter, both sugars and cream until light and fluffy, 2-3 min.
Add egg. Mix util emuslified. Add molasses. Mix
Mix in spices, ginger, and baking soda.
Add flour and candied ginger
Chill for at least 30 min.
Portion out 1 1/2 tbsp sized balls and roll in sugar. Chill for 5 min. Bake at 350 for 13 min.
Let cool on the wrack.
