These melt-in-your mouth cookies are spiced up with cardamom and upgraded with homemade strawberry jam.
These cookies are the perfect gift: not only are they classy, but they are also delicious! The chocolate drizzle on top is optional, but it definitely adds a really clean/fancy look to these cookies.
I used homemade strawberry jam for the filling, but you can try different kinds of jams/fillings too! Store bought jam can be used for the filling instead of making your own.

Homemade Strawberry Jam
300 g strawberries, fresh or frozen(I used fresh)
48g sugar
juice of half a lemon
1/2 tspn cardamom
1/4 tspn pumpkin pie spice
Cookie Dough
170g butter, softened
101g sugar
1 egg plus 1/2 an egg
3/4 tspn vanilla
75g ground almonds
285g flour
3/4 tspn baking powder
pinch of salt
1/2 tspn cardamom
For the cookie dough: beat sugar and butter until light and fluffy. Add in egg and vanilla.
Mix flour, ground almonds, baking powder, salt and cardamom in a separate bowl, then add to the butter mixture. Fold.
Wrap the dough and chill for 1 hr.
While the dough is chilling, make the jam. Combine all ingredients in a pot and put on med-low heat. Let simmer for 25-30 min, stirring frequently. Let cool.
Preheat oven to 350F. Roll out half of the cookie dough and cut out circles using a 3 inch cookie cutter. Stamp out smaller holes in the middle of each cookie(I used the end of a pastry tip.) Bake on a parchment-lined baking sheet for 9 min.
Roll out and stamp out circles of the second piece of dough the same way, but don't cut out circles in the middle of the cookies. Bake for 10 min at 350F.
Let cool on the baking sheet for 2 min, then transfer to a rack to cool completely.
Spread jam and sandwich the cookies. Apply chocolate decorations(optional).
