Decadent Brownie Cookies

These cookies are the definition of rich. Chocolatey and not-too-sweet, these are my go to brownie cookies when I'm tired of making regular old cookies.


I'm a loser for anything chocolate, so these cookies were one the first recipes I learned to master in order to make them over and over again. The flaky salt added on the top just brings these cookies to the next level. If you love chocolate, then you will most definitely love this recipe.


This recipe uses real melted chocolate that is incorporated into the batter instead of cocoa, so be sure to use a good-quality dark chocolate when making this.

Brownie Cookie Recipe:


-makes 10-12 cookies-

Cookie Dough

  • 110g chocolate

  • 30g butter

  • 55g brown sugar

  • 1 egg

  • 1/4 tspn baking soda

  • 1/4 tspn baking powder

  • 45g flour


  1. Melt the chocolate and butter over a ban-marie, until melted and smooth.

  2. Using a whisk, whisk together the brown sugar and egg for 3-4 min, or until slightly increased in volume and has thickened slightly.

  3. Add the chocolate to the egg mixture and mix. Sift over the baking soda, baking powder, and flour, and fold.

  4. Rest the batter for 30 min.

  5. Scoop the batter on a parchment lined baking sheet and bake at 160C for 10 min.

  6. Enjoy! *note, these cookies get better as the days go on(even more fudgy!) so be patient and don't eat them all in one go!
